Carrot Cake Overnight Oats

These make the perfect summer breakfast, you can eat them cold straight out of the fridge. Make them right before you go to bed, or you can make a few servings and keep them in the fridge for up to 5 days. Whichever you decide, make sure they’re in the fridge for about 5 hours before you eat them. I use these small mason jars that measure about 250ml/1 cup.

Makes 1 serving

INGREDIENTS
Small Jar
3/4 cup Oats
1 Tbsp Raisins
1 Tbsp Chopped Pecans
2 Tbsp Grated Carrots
1/2 Tsp Ground Cinnamon
1/4 Tsp Ground Ginger
1 Tbsp Maple Syrup
1/2 Tsp Vanilla Extract
Enough water or Milk to fill the jar

METHOD
1. Mix oats, raisins, pecans, carrots, cinnamon and ginger together in a small bowl.

2. Add above mixture into jar, pour over maple syrup, vanilla extract and top with enough water or milk to fill the jar. Seal jar.

3. Place the jar in the fridge and leave it overnight.

TIPS:
You can play around with different flavor combinations-
Grated apple instead of carrots for a take on apple pie.
Leave out the carrots, raisins and spices and top with fresh blueberries before serving.
Leave out the carrots, raisins and spices and add 1 Tbsp Cocoa Powder and 1 Tbsp Peanut Butter

Crystal Summer Rolls

INGREDIENTS

Rice Paper Wrappers
1 Large Carrot, julienned
1 Cucumber, julienned
1 Red Bell Pepper, julienned
Lettuce, Shredded
Fresh Basil
Fresh Mint
Vermicelli Rice Noodles (Soaked according to packaging)
Cooked Shrimp, peeled and sliced in half
Warm Water

Dipping Sauce

¼ Cup Peanut Butter
1 Tbsp Hoisin Sauce
2 Tsp Soy Sauce
1 Tbsp Lime Juice
1 Tsp Chilli Garlic Sauce
1-2 Tbsp Warm Water, or more if needed
Garnish: Crushed Peanuts, Sprinkle Of Crushed Red Pepper

METHOD

Fresh Rolls

  1. Pour the warm water into a large pyrex dish or baking pan
  2. Dip one wrapper into the water at a time. Submerge for about 10-20 seconds (or according to packaging instructions). Wrapper should be soft but still slightly firm and pliable.
  3. Remove from the water and place onto a plastic or wood board.
  4. Add a few pieces of carrot, peppers, cucumber on the bottom of the wrapper closest to you. Top it with the mint, basil, noodles and lettuce. Add shrimp on top of the lettuce.
  5. Roll the wrapper by folding in the sides and rolling towards the top, like you would a burrito. Look at this step by step page if you are having a hard time.
  6. Place on a serving plate.

Dipping Sauce

  1. Combine all ingredients, except garnishes, and mix until well combined. Add more water if mixture is too thick.
  2. Garnish with crushed peanuts and chili flakes.

Serve

  1. Serve whole or cut in half, slightly diagonally and serve with dipping sauce.

 Tips

  • Play around with whatever fresh ingredients you have.
  • Omit shrimp for a vegetarian version.

No Bake Date Crunchies

INGREDIENTS
250G (8.8 ozs) Pitted Dates, Chopped
125 G ( ½ cup) Butter or Block Margarine
125ml ( ½ cup) Sugar
750ml (3 cups) Rice Crispies
Desiccated Coconut for Rolling

METHOD
1.Place the dates, butter/margarine and sugar in a saucepan.
2.Cook over medium heat for 5-10 minutes stirring all the time till soft.
3.Remove from heat and add the rice crispies and mix well.
4.Form into balls and roll in desiccated coconut.
5.Store in an airtight container. Can be frozen.

Risotto

INGREDIENTS
1 Cup Arborio Rice
1 Litre (4 Cups) Chicken stock – I use instant
100G (2 fl 0z) oil
1 Small Onion Finely Chopped
125ml (1/2 cup) White Wine
1 sprig Rosemary, Finely Chopped
½ tsp Pepper
1 tsp Salt
Pinch Safron – optional, added to the stock

METHOD
1.In a small saucepan heat the chicken sock then turn to low.
2.Use a medium frying pan and heat oil.
3.Add The chopped onion and saute until translucent, Add the rice and saute for a few minutes.
4.Add the wine on high heat and stir.
5.Add salt, pepper and rosemary and stir in.
6.Start adding the stock a ladle at a time stirring until the liquid has evaporated. Add another ladle and stir.
7.From the time stock is added it takes 20 minutes until the Risotto is ready. At this stage all the stock should have been used. Taste and when the rice still has a slight bite it is ready to serve.
8.I make it dairy free. If you want to make it with dairy use half butter and half oil to start with and then add ½ cup parmesan cheese at the end and stir in.

Papino (Papaya) Salad

INGREDIENTS
1 Butter Lettuce
2 Avocado Pears
1 large or 2 small Papino (Papaya)
1/4 cup long grain rice

DRESSING
Seeds of one Papino (Papaya)
1 Chopped Onion
1/2 Cup Oil
1/2 Cup Vinegar
1/2 Cup Sugar
1 tsp Mustard Powder
1 tsp Salt

METHOD
1. For the dressing place all the ingredients into a blender and blend until smooth. The seeds will be finely chopped.
2. Fry the rice in a dry frying pan until they start to pop and turn a light golden.
3. Remove from the pan and allow to cool
4. Wash and dry the lettuce and break into pieces. Place on a platter.
5. Peel and slice the papino-papaya. Peel and slice the avocado.
6. Arange the papino-papaya and the avocado on the lettuce.
7. Just before serving pour over the dressing and sprinkle over the rice.

Italian Tomato Sauce, Marinara Sauce

I can never have enough of this sauce. I make a large batch and freeze in small zip seal bags pushing all the air out. So useful for Bolognese, vegetable or meat lasagne, puttanesca sauce or even served with fried eggs.

ITALIAN TOMATO SAUCE (NEOPOLITANA SAUCE)

INGREDIENTS
4 Tbls Olive Oil
2 Cloves Garlic – Crushed
800g Italian Tinned Tomatoes
½ Cup White Wine – Optional
1 Large Yellow Onion – Peeled And Chopped
½ Tsp Ground Black Pepper
1 Tsp Salt
1 tsp Sugar
1 tbls Italian Herbs – Rubbed Between Your Hands To Release The Flavours

METHOD
1. In a large pot heat the oil and add the onion & garlic. Do not brown the garlic as it goes bitter when browned.
2. When the onion is translucent add the tomatoes, sugar, salt & pepper, wine and mixed herbs.
3. Simmer for 45 minutes with the lid off. Stirring occasionally.
4. When cool freeze portions in zip lock bags.
5. This is a basic Neapolitana sauce. Use it as a base for pasta with vegetables either sautéed or grilled.
6. Can add a touch of cream for a Rose sauce.
7. Can also be used when making Chicken or Beef or Vegetable lasagna.

Japanese Noodle Salad

DRESSING
60ml Soya Sauce
75ml Canola Oil
15ml rice vinegar
¼ Cup Sugar
10ml Mirin – If No Mirin Add Extra Rice Vinegar And Sugar
20ml Lemon Juice
1 Clove Garlic

SALAD INGREDIENTS
250 G Oriental Style Noodles (Hokien) I Used Italian Linguine
250 G Soya Bean Pods – Edamame Shelled
20 Snow Peas – Thinly sliced
2 Avocados – Cubed
Small Bunch Chives
1 Tbls Toasted Sesame Seeds
1. Place in the dressing ingredients into a blender and blend.
2. Boil the noodles until cooked, Drain and allow to cool.
3. Place edemame, snow peas & avocado in a bowl and add noodles
4. Pour over the dressing and mix well.
5. Place on a serving platter and sprinkle on sesame seeds and finely sliced chives.

Gluten Free Vegan Pumpkin Chocolate Bread Mini Loaves

Pumpkin Chocolate Bread

This is a very moist dense pumpkin bread due to the high fruit content and low fat content. The recipe can also be made into muffins – adjust baking time to 20-30 minutes.

INGREDIENTS

1 ¾ Cups Gluten Free Flour
1 Tsp Baking Powder
½ Tsp Baking Soda
1 Tsp Salt
1½ Tsp Cinnamon
1 Tsp Ground Ginger
¾ Cup Puree Pumpkin
2 Ripe Bananas
¼ Cup Applesauce
⅓ Cup Sugar
½ Cup Non-Dairy Milk
1 Tsp Vanilla Extract
¾ Dairy Free Semi Sweet Chocolate Chips

METHOD

  1. Preheat the oven to 180°C/350°F. Spray 3 mini loaf pans with non stick spray.
  2. Sift flour, baking powder, baking soda, spices and salt into a medium mixing bowl.
  3. In a large mixing bowl, mash the bananas and add the pumpkin, applesauce, sugar, non-dairy milk and vanilla. Mix everything together until well combined
  4. Add the dry ingredients into the wet ingredients and mix well.
  5. Add the chocolate chips and combine.
  6. Spoon evenly into loaf pans.
  7. Bake for 35-45 minutes. Insert a toothpick into the loaf and if it comes out clean the bread is done.
