Asian Shrimp Rice Bowl

Asian Shrimp Rice Bowl – http://www.oceansbetweenkitchens.com

INGREDIENTS 
Serves 4

20 Large Shrimp (Shell and Tail removed)
3-4 cups Cooked Rice
2 Shredded Carrots
1/4 Sliced English Cucumber
4 Tbsp Pickled Ginger
1 Sliced Avocado
Handful Beansprouts
1/2 Cup Thinly Sliced Green Onion
Fresh Cilantro (Coriander)
Sesame Seeds

SAUCE
3 Tbsp Soy Sauce or Gluten Free Tamari
3 Tbsp Mirin
3 Tbsp Rice Wine Vinegar
1.5 Tbsp Sesame Oil

Combine all sauce ingredients in a bowl to serve.

METHOD
1. Place a serving of rice in the bottom of a bowl, add shrimp, carrots, cucumber, ginger, avocado and beansprouts.
2. Sprinkle with green onion, cilantro and sesame seeds.
3. Drizzle sauce over rice bowl.

Ginger Cake

When it is cold and you want something warm for tea there is nothing like a slice of warm ginger cake with butter. I bake mine in a bundt tin. The smell of ginger fills the house. I also serve the cake with warmed custard for dessert.

Ingredients
3 cups flour
3/4 cup castor sugar
3 tsp powdered ginger
1 1/2 tsp mixed spice
1 tsp baking powder
1 cup oil
1 cup syrup
1 cup warm water
3 eggs, well beaten
2 tsp bicarb of soda

Method
Oven 190C 400F
Sift spices, flour, sugar and baking powder. Make a well in the centre and fold in the oil, syrup, warm water, beaten egg and lastly the bicarb which has been dissolved in a little warm water. Beat in a mix master at low speed for 8 minutes. Pour into a well greased bundt tin or a large well greased tube tin. Bake for 55-60 minutes till a skewer inserted into cake comes out clean.

This is really good served with stewed apples.

Ginger Bread Men

Makes about 80
INGREDIENTS

125 grams Butter
3/4 cup Sugar
3 Eggs
4 tsp Ginger
2 tsp Mixed Spice
2 tsp Cinnamon
1/2 cup Syrup
2 tsp Bicarbonate of Soda mixed with 1/4 cup boiling water
4 cups Flour (plus a little extra to get the correct consistency)

METHOD

Oven 180 C (350F)

1. Cream butter and sugar.
2. Add eggs one at a time beating all the time.
3. Add ginger, mixed spice and cinnamon and mix.
4. Add syrup and bi-carb mixture.
5. Gradually add flour beating all the time.
6. At this stage chill the dough. Do not add more flour until the dough is well chilled.
7. Roll out and cut into shapes.
8. Bake for about 10-15 minutes
